If I delete the XenForo default style...

Will the skin still work properly? I don’t want any other style choices.

I'd just disable it personally, non-admin users won't be able to select it. Having the default style is nice for debugging (in case an add-on isn't working you can verify it's broken on the default style as well for an example).

But yes, if you delete the XenForo default style it won't hurt our styles.

You can disable the style by going to Appearance -> Styles, click the little toggle button (second button to the left of the "templates" link on each style row).
