I would like my logo to stay on the left in the desktop view (that's how I have it set now), and be centered in the mobile view. Is that possible?

Go to Style properties -> Header and navigation on your style. Find these options and make sure they're set to these values:

That would be too easy. I mean centered only on mobile view, and aligned to the left on the PC screen. Unfortunately, it doesn’t work with your setting.
