Sorry for the confusion. I forgot Omni is a little unique in the sense that we built in multiple color schemes into a single style. At the time, it was a cool concept, but we haven't done it since. The problem is really as you mentioned, the color palette/basic colors is rendered somewhat useless because of the limitations set by XenForo.

If you're running a single color scheme, I'd open the template "xb_setup_style.less". Then go to your color palette on your child style. Whichever color scheme you're using, you can move the values over to the color palette. As an example, I think you're using Serene? You'd move the values over like this:

By default, you can control the font color globally by going to Style properties -> Basic colors. At the top, you'll find the text colors for the entire site.
 
I found that, those are all codes though rather than colors, and it is not intuative how those works. I did read the site documentation here that goes into fonts, but not colors. Is there another set of documentation I should be looking at?

I did resolve my original issue, I went into settings and changed the main color scheme and accent color, but it was guesswork rather than knowing what I was doing. The contrast on the defualt Omni setup wasn't high enough for some of my older users.

Sorry for the trouble. Again, we don't do this approach anymore. If you do this once on your child style, it'll keep on upgrades and allow easier tweaking.

Solution
After you make those changes, you should be able to see the font colors in the properties a little easier to adjust them. We use "@xf-paletteNeutral3" for the overall font color across the entire site. Then inside of Style properties -> Basic colors, we set some additional colors such as the faint/dim. These values by default just dim the default font color a little.
